Summer Tomato Salad
Recipe by: Adventure Associates guide, Hamid - Lamu Island, Kenya, E. Africa.
Fresh summer beefy tomatoes
Sweet onions, thinly sliced
Lime juice
Cayenne, sprinkle lightly
Salt & Pepper to taste
Mix Lime juice and spices to taste. Marinate tomatoes and onions in lime and spices for a picnic on the beach with Sourdough Bread, and Coca-Cola. Served best with fresh-caught Red Snapper from the Indian Ocean, cooked over a grill of branches and thicket found on the shoreline. Lick fingers accordingly. Actually served on hot summer days for any occasion and is a very refreshing treat.
