Energy Cookies

1/2 c. pumpkin seeds
1/2 c. sunflower seeds
1/2 c. sesame seeds
2 Tblsp. flax seeds
(Toast all seeds and cool completely before mixing)
4 c. flour
1 c. chocolate chips
2 c. rolled oats
1 tsp. salt
1 tsp. baking powder
1 c. canola or safflower oil
1 c. honey
1 c. raisins, softened in hot water (reserve this water)
Optional: 2 Tblsp. or more of your choice: peanut butter, vanilla, brown sugar, almond extract, nutmeg or other...something for sweetening if you choose
Mix flour, chocolate chips, rolled oats, salt and baking powder in a large bowl. Add the toasted and cooled seeds. Add oil, honey and raisins. Stir. Add raisin water a little bit at a time until the batter is moist but stiff. Spoon the dough onto an UNgreased cookie sheet, and mash to desired shape and thickness. (The cookies do not spread or rise in the oven.) Bake for 10 minutes or so at 350 degrees F. until the edges are brown or just before. Cool for 15 minutes. Pack into daypack for hearty snack or pour warm milk over one in a bowl for a healthy breakfast!
