Feta Cheese Salsa

  • 6 Roma Totatoes
  • 4 Large Avocadoes
  • 1 Large Red Onion
  • 2 Tblsp. flax seeds
  • 2 Cloves of Garlic
  • 1 Cup Feta Cheese
  • Olive Oil
  • Salt

    Dice tomatoes and red onion pretty small and mix well. Add crushed garlic and feta cheese and salt to taste, then mix well again. Add finely chopped avocadoes last and mix gently trying hard not to create a guacamole type of texture. Drizzle olive oil for flavor. Serve with fresh oven-baked corn chips.
