Relishable Recipes

Meals served by new friends in distant countries result in recipe swaps. Here is a favorite.

North African Lentil Stew

  • 1-2 Tblsp olive oil
  • 1 Cup chopped Onions
  • 3 Jalapeno peppers (seeded and minced)
  • 4 Garlic cloves minced
  • 1 tsp cumin powder
  • 1 Tblsp Chili powder
  • 1/2 tsp coriander powder
  • 1 Cup dried grey-green lentils, rinsed
  • 3 Lg tomatoes peeled
  • 3 Cups vegetable broth - organic
  • 2 lbs winter squash, peeled, cubed (butternut or buttercup)
  • 1 bunch red or green swiss chard, chopped (including stems)
  • 2 Tblsp Lemon juice, freshly squeezed
  • Salt and Pepper to taste * Substitute Jalapena with a Pasilla peppers. Large darker green peppers that are sweeter and not as hot as the jalapeno. Be certain to take the seeds out.

    Heat oil in a large, heavy-bottomed soup pot, over medium heat. Add onion, chilies and garlic. Saute for about five minutes, until tender. Add chili powder, cumin and coriander and cook for one minute more. Add lentils, tomatoes, veggie broth and heat to boiling. Reduce heat to low and simmer for 30 minutes...until lentils are soft and tender. Add squash cubes and a little water (if necessary) and simmer an additional 10-15 minutes or until the squash is tender. Add chopped chard, pushing it underneath and cover the pot. Shhh. Simmer about 5 minutes or so - do not overcook - long enough for chard to wilt but is still brightly colored. Add lemon juice, salt, pepper and serve. Just as delicious on day 2 and 3, carefully reheated and not allowed to cook again. **This stew is also wonderful with fresh beets added. As it thickens add a dollop of sour cream for a pseudo borscht.
